Salsarita’s Fresh Mexican Grill, a fast-casual Mexican restaurant chain offers a fun, fresh, and customizable dining experience. Founded in 2000 in Charlotte, NC, Salsarita’s has grown to over 86 locations in 19 states, including 13 locations in Kentucky. One of the stars of the chain is Pam Stallings, who along with husband Steve, is about to open their 3rd location in Louisville.
“We are thrilled to open our third Salsarita’s in the Louisville market, and to bring our fresh and flavorful Mexican food to the Shepherdsville community,” said Steve Stallings. “We are grateful for the support and loyalty of our customers, and we look forward to serving them for many years to come.”
Clearly the Stallings are no strangers to the Louisville community, having opened their first Salsarita’s in St. Matthews in 2005, and their second in Middletown in 2012. They have been actively involved in various local events and causes, such as sponsoring the Make A Wish, donating food to Norton’s Hospital, and supporting the Kentucky Humane Society, among many other community endeavors.
Much of this is due to the incredible energy and marketing mind of Pam Stallings. While Steve is really “the operator” of all things business, Pam is the heart and soul of the 3 restaurants, and the motivator of their staff in each location. One manager said with a smile, “How can we possibly not be motivated and do as much as the owner does? We can’t let her outshine us.”
The Stallings also run some of the most successful restaurants in the entire Salsarita’s system, - the highest AUV out of any location in the system. Their sales success is largely due to their catering business. Another of Pam’s pet projects that she took on with zeal.
“We’ve had challenges, believe me,” added Pam. “Every restaurant, or business, for that matter has them. It’s the way you handle them. I saw this great opportunity with our catering end—the same terrific food right to the office. Especially after COVID, we saw an opportunity. More people finally returning to the office, but for sure behind in work. Why not promote terrific “office packages” for lunch. More productivity for our customers, who could then hold meetings in the office with lunch provided and brainstorming sessions.”
When asked how she built the catering business, and still keeps it thriving, Pam had a simple answer.
“The most important key to a successful catering business is the food quality. A meal made with love by a trusted neighborhood restaurant tastes better than one that is simply thrown together. Ensure that your passion can be tasted in each client you serve. We are local and use only the freshest produce and quality ingredients. People know us. They know they are getting this quality. Top it off with great service, which means efficient implementation and staff to get everyone their meals in a timely manner.”
The new Shepherdsville location features a drive-thru, a spacious dining area, and a salsa bar with a variety of homemade salsas. The menu offers customizable burritos, tacos, nachos, salads, and more, made with high-quality ingredients and prepared fresh daily. The restaurant also offers online ordering, delivery, and catering services for any occasion.
Company CEO Phil Friedman offered, “The Stallings are stars in all that they take on and make everything work better than the way they found it. They did a super job growing out their first location. Pam took on the catering aspect of the business and turned that into a huge revenue winner. When they added the system’s 3rd drive-thru to their Shelbyville Rd. restaurant, sales increased exponentially. The Stallings are the type of multi-unit franchise owners we want to continue to grow the brand and they have set a very high bar.”
But when asked her real secret and why she thinks they’ve been such a success, her answer, well, it was strictly Pam and her effervescence; “Who doesn’t love tacos?”
